The local SAVOR... team is led by an industry professional with over 20 years of public assembly facility experience.

Mark Micallef II - Director of Food and Beverage

Mark Micallef has experience in the hospitality industry that expands fifteen years. All of which have been in management and leadership roles. Mark joined SAVOR in 2015 as the Director of Food and Beverage of four entertainment venues in Jacksonville, he is directly responsible for the day to day operations; producing over $10 million in revenue annually while enhancing the experience of hundreds of thousands of patrons annually at each of the four unique entertainment venues.

The Times-Union Center for the Performing Arts is a multi-theater complex with three halls ranging from 600 to 3,000 seats in each, producing over 400 shows a year. Mark works with the center’s two largest clients, the Jacksonville Symphony Orchestra and Florida State College of Jacksonville’s Broadway Series, to enhance the organization’s marketing and sponsorship initiatives, food and beverage experience, show specials, as well as subscriber and membership enhancements. At the Jacksonville Veterans Memorial Arena, Mark utilizes premium services and concessions experience to direct his food and beverage team in producing over 150 events a year.  The Prime F. Osborn Convention Center plays host to dozens of Jacksonville’s social events and countless public shows. Mark is responsible for securing through his catering sales department all local and social events from weddings and anniversary parties to corporate galas. Mark also oversees the food and beverage operation at the Ritz Theater and Museum, perhaps one of Jacksonville’s hidden gems playing host to the more urban culture of the performing arts world.

Mark’s passion for creating a unique experience for guests and positive energy have proved to be extremely valuable to customers, clients, venues and his team. Admired as a high level motivator, Mark carries a “get the job done approach” but balances it with his attention to detail in order to continually be successful both personally and professionally.

David Bennett - Senior Food and Beverage Manager

David Bennett grew up in Michigan, where he worked as the Catering and Concessions Manager for SAVOR… Saginaw at The Dow Event Center. At The Dow, David oversaw all food and beverage events at each of its three facilities (Arena, Convention Center and Theater). When a new arena was being built in Corbin, KY and they needed someone to help build and run the food and beverage department, they called David. He was able to negotiate and secure almost all equipment at no cost to the city or company to start up the department. With his vision and designs, he watched the sand floors and concrete walls become concession stands and a kitchen.

David accepted the role of Arena Food & Beverage Manager for the Jacksonville Veterans Memorial Arena and moved to Jacksonville, Florida in August of 2010. Since then David has been promoted to Senior Food & Beverage Manager, where he assists in overseeing not only the Veterans Memorial Arena but also the Times-Union Center for Performing Arts, the Prime Osborn Convention Center and the Ritz Theater and Museum.

During his free time, David enjoys watching the Detroit Tigers, trying new restaurants with his wife and going to the beach on the weekends.

Kevin Adams - Executive Chef

As the Executive Chef of SAVOR Jacksonville, Kevin oversees all aspects of the culinary department. He is responsible for; planning, costing and executing all culinary events.

Kevin graduated from The Culinary Institute with a degree in Occupational Sciences, and spent his first year out of college working as an oyster man at the Plaza Hotel Oyster Bar. In his early professional days, Kevin worked for Rainbow Room as the tournant, Regency Hotel as Sous Chef, Chef-Steward for Paul Underhill Associates of New York and later, as Executive Chef of Alcoa Properties Dataw Island Country Club.

In March 2007, Kevin started his position with SAVOR as Sous Chef with SAVOR Savannah. During his time with the company, Kevin has played a key role in the success of notable events such as the Wolfson’s Galas and Jacksonville Symphony Gala. Kevin strives to ensure client satisfaction and overall company success. 

When Kevin is not working, he enjoys traveling and spends his free time with his wife Rose on beach walks and dining out to explore cuisine.

Lindsey Tucker - Senior Catering Sales Manager

As the Senior Catering Sales Manager, Lindsey proactively solicits and manages Group Sales for the Prime Osborn Convention Center, The Times-Union Center for the Performing Arts and the Ritz Theater and Museum.

Lindsey graduated from Southern Illinois University with a Bachelor’s degree in Hospitality and Tourism Management and spent her first few years out of college working in and managing different functions of restaurants. Lindsey is an outgoing, dynamic and sales focused professional who has a relentless drive to deliver more than just results. She has a track record of effectively leading and managing all aspects of a restaurant, and of making guests feel cared for, valued, and respected. As a true hands on leader, she is not afraid to jump in and assist wherever is needed, and will do everything she can to deliver results that will contribute to the overall mission and success of the business.

In June 2015, Lindsey moved from the SMG team to the SAVOR Sales team to become the new Suites and Catering Sales Manager, then in September of 2016 she was promoted to the Senior Catering Sales Manager overseeing catering at the Prime Osborn Convention Center, the Times-Union Center for the Performing Arts and the Ritz Theater and Museum in Jacksonville.  During her time with the company, Lindsey has helped increase suite food and beverage sales and focuses on client satisfaction and loyalty while striving to increase overall catering revenue at the arena.

Outside of work, Lindsey enjoys spending time with her friends, the outdoors, traveling and spending time at the beach.

Marlene Ritter - Suites & Catering Sales Manager

Marlene Ritter grew up in Oviedo, Florida before relocating to Jacksonville in 2012.  She spent her first few years of college working in, and managing, different restaurant concepts.  In doing so, she has built a strong background in Food and Beverage with a heavy focus on catering sales and customer service.

Marlene started her career with SAVOR…  while attending Florida State College at Jacksonville and working towards her Bachelors of Science degree in Hospitality Management.  As the Suites and Catering Sales Manager for the Jacksonville Veterans Memorial Arena, Marlene handles catering sales for all sporting events, concerts and private functions in addition to suite catering sales.

Marlene is a big animal lover and spends much of her free time doing rescue work.  She also enjoys fishing with her husband Doug, traveling, going to Jaguars games and cooking at home. 


Sean Kearney - Food and Beverage Manager

Sean Kearney joined the SAVOR… team in 2015 as the Food and Beverage Manager for the Jacksonville Veterans Memorial Arena.  He is responsible for all aspects of the concessions experience at the arena.  Including, but not limited to purchasing, staffing and quality/menu control.  Sean also oversees the concession operation at the Ritz Theater and Museum.  The Ritz Theater and Museum allows guests to take in great music and arts in an intimate venue.

Sean comes to SAVOR… with over ten years of experience, including Major League Baseball, NASCAR, College Football and Basketball and Minor League Baseball.  Sean was the Operation Manager of Food and Beverage for Salt River Fields, home of the Colorado Rockies and Arizona Diamondback spring training.  Sean helped maintain a 90% guest satisfaction rating for three baseball seasons, setting the bar for the Southern League.  He also averaged 94% staff approval rating from the concession staff during the past three years.  Sean has a Business Management degree from the University of Alabama.  Sean believes in leading through hard work and determination. 

Ashley Arrwood - Food and Beverage Manager

As the Food and Beverage Manager for SAVOR... Jacksonville at the Times-Union Center for the Performing Arts, Ashley Arrwood oversees all aspects of the concessions, bartending and catering departments.  The Times-Union Center for the Performing Arts has three theatres, producing over 400 shows a year.  She works with the Jacksonville Symphony Orchestra and the Florida State College of Jacksonville's Broadway Series.  

Ashley Arrwood started her career with SAVOR... Jacksonville in August 2016.  Since the start of her career with SAVOR..., she has successfully managed many events, such as: Bob Dylan concert, The Florida Forum, Sulzbacher Transformations and the Jacksonville Symphony Gala.  Previously, Ashley was the General Manager at Hurricane Grill and Wings for three years and has over 12 years of restaurant management experience.  Her main focus is to always provide excellent customer service and come with exciting new ideas to increase sales.

In her free time, Ashley enjoys gardening, going to the gym, relaxing at the beach, spending time with her friends, cooking, scalloping and camping.

Justin Davis - Food and Beverage Manager

As the Food and Beverage Manager of SAVOR… Jacksonville at the Prime Osborn III Convention Center, Justin Davis oversees all aspects of the concessions and catering departments. He is responsible for coordinating functions with a variety of clients including show managers of our annual and up-and-coming exhibition and trade shows, outreach executives for local and national businesses, and private event organizers hosting a range of events from casual breakfast or lunch to formal evening galas.

Justin Davis started his career with SAVOR… Jacksonville in December 2012 as a Food and Beverage Supervisor, while attending the University of North Florida for his Bachelors of Science Degree in Sport Management. As a Food and Beverage supervisor Justin played a key role to the success of many large public events such as six sold out Garth Brooks’ concerts in nine days, the NCAA Men’s Basketball Tournament in 2015, Arena Football games with the Jacksonville Sharks and large catering events such as the GE Annual Shareholder dinner. With SAVOR… Jacksonville, Justin also played a large role in the structural back-of-house set up of a new Quest/NCR point of sale system installed at the JVMA. Justin was responsible for setting up the inventory, cost of goods, transfers, and credit card processing features of the new system.   

Justin is a die hard University of Florida Gator fan. In his free time, he loves going to Gator football, baseball and basketball games with his family. He also enjoys boating, fishing, skiing and tubing in the Suwannee River near where he grew up. 

Eric Kroll - Food and Beverage Manager

Eric Kroll was born in Portsmouth, VA but raised in Pensacola, FL where he earned his degree in Exercise Science at the University of West Florida and was a member of the 2011 NCAA National Championship Baseball team. After earning his degree, he began working with the Pensacola Blue Wahoos, Double A Affiliate of the Cincinnati Reds in March 2012. The organization won numerous awards including Organization of the Year and Ballpark of the Year in 2012.  

After spending four seasons with the Blue Wahoos front office, Eric and his wife decided to move to Jacksonville,FL to open Delta Life Fitness, a women’s fitness, nutrition, and lifestyle facility and has been operating since November, 2015. Eric accepted the role of Food and Beverage Manager for the Jacksonville Veterans Memorial Arena in February of 2016. He is responsible for the preparation and implementation of concession and bartending functions within the venue and overseeing the scheduling of SAVOR staff members for such events.

In his spare time, Eric enjoys spending time with his wife, Chelsea and family. He is an avid baseball and football fan and enjoys the outdoors, traveling, playing sports, exercising and cooking at home

Travis Bosche - Sous Chef

Travis Bosche started his career with SAVOR Jacksonville in April 2009 as a cook while attending The International Culinary School at The Art Institute of Jacksonville for his B.A. Culinary Management. In January 2011, Travis was promoted to Kitchen Lead then was recently promoted to Sous Chef of the Jacksonville Veterans Memorial Arena in June 2014. His main responsibilities include culinary operations at the arena, including the arena suites and all catering business. A few notable events Travis has contributed to include, the 2013 Davis Cup, Florida/Georgia Bull Gators BBQ Luncheon, Maroon 5 concert, Dave Mathews Band concert and Eric Clapton.

Travis' professional experience include Lead Line Cook at 45 South in Savannah, GA and Kitchen Manager at The Pirates' House in Savannah, GA. In his past time, he likes to play golf, attend concerts and live sport games and BBQ with family and friends.

Barrie Weathersbee - Sous Chef

As Sous Chef, Barrie primarily focuses on the catered events at the Prime Osborne Convention Center, with supporting roles at the Times-Union Center for Performing Arts, the Ritz Theater and Museum and the Jacksonville Veterans Memorial Arena.  She works closely with the Executive Chef, the Food and Beverage Manager and the Catering Sales Team to insure seamless execution of high profile and sometimes logistically challenging events.  Some of these include:  Wolfsons Galas, Celebrity Chefs and the Annual MLK Breakfast.

A Jacksonville native, Barrie Joined the SAVOR... Management Team in 2017, bringing many years of experience in foodservice, with an emphasis on professional sports, logistics and training.

In her leisure time, Barrie travels and spends time with her family and friends.
